Vinification

Whole-bunch pressed Melon de Bourgogne, fermented with indigenous yeasts and aged on fine lees; low-intervention, with minimal sulfur.

Winery Story

Fred and Claire Niger's Domaine de l'Ecu in Muscadet has been organic since 1975 and biodynamic since the late 1990s, adding elements of "cosmoculture". Much of the range is vinified in amphorae with indigenous yeasts and only minimal sulfur.

Vineyard Story

A single-soil Muscadet: Melon de Bourgogne grown on granite, which brings floral lift and a rounder, warmer stony character than the estate's gneiss cuvées.
