Vinification
Gently pressed Chardonnay, about 20% fermented and aged in used oak and 80% in stainless steel, kept on fine lees for 10–12 months with regular stirring.
Winery Story
Domaine Bernard Defaix are the largest landholders on the Côte de Léchet above Milly, certified-organic in the cellar since 2012 for maximum purity and minerality.
Vineyard Story
Côte de Léchet is a south-east-facing marl-and-limestone slope on the left bank of the Serein; its stony soil is studded with fossilised Exogyra virgula oysters that give classic Chablis its electric salinity. Vines around 35 years old.
