Vinification
Pinot Noir fermented with indigenous yeasts and gently handled, low-intervention with minimal sulfur to keep the fruit pure and bright.
Winery Story
Fred and Claire Niger's Domaine de l'Ecu in Muscadet has been organic since 1975 and biodynamic since the late 1990s, adding elements of "cosmoculture". Much of the range is vinified in amphorae with indigenous yeasts and only minimal sulfur.
