Vinification
Chardonnay fermented with indigenous yeasts and raised in barrel with restrained use of new oak, aiming for balance between fruit and mineral tension.
Winery Story
Florence Cholet returned to the family estate at Corcelles-les-Arts on the Côte d'Or in 2019, after training in biology and oenology and working in France, the USA and Australia. She dropped herbicides and pesticides and ferments with wild yeasts.
Vineyard Story
Chardonnay from Burgundy's Côte d'Or, on the limestone-clay soils that give white Burgundy its minerality and cut.
